Although the cultivation of rice has been mentioned since ancient times in Theofrastus’ (botanist 370-285 BC), Dioscorides’ (naturalist 1st century AD) and Galinos’ (doctor 130-200AD) writings who had studied rice as a plant, food product and a means of curing diseases of the curing tract, its systematic cultivation in Greece begun in the 1950s when its consumption began to increase gradually. Today rice is recorded in the list of the strong Greek crops since 120 thousand tons are produced annually. Around 40.000 acres of rice are grown and around 20.000 tons are produced annually in the prefecture of Serres. The rice of Serres is considered most delicious due to the fact that it is grown in the fertile plain of the Strimonas river.
