Trahanas (Politikos – Constantinopolitan Style) Traditional trahanas has nourished generations of Greeks. It is a type of pasta made from flour and milk, with a granular and irregular shape. The grains have a diameter of approximately 2-3 millimeters. It comes in various types: sour and sweet, coarse and fine. Sour trahanas is kneaded with yogurt. During its preparation, the final stage involves drying, where trahanas is spread out to maximize surface area. It is rich in carbohydrates but also contains fats, making it necessary to use little or no olive oil or other fats in its preparation. The presence of milk in the recipe increases its protein and calcium content, making it a nutritious food suitable for children. Additionally, it is rich in magnesium, which is essential for growth, muscle contraction, and blood pressure regulation.
