The Beluga lentils owe their name to their deep black color and small, round shape, which resembles the eponymous caviar. They are exceptionally tasty and easier to digest than regular lentils. They are rich in protein and fiber and have high antioxidant levels. Ideal for soups, cold salads, as a side dish, or as a puree for premium dishes.

Cooking Tip: Beluga lentils do not require soaking overnight. Boil them in double the amount of water without salt, and if desired, add salt later.
