If any type of pasta can be considered truly Greek, it is undoubtedly hilopites! Hilopites are made from flour, eggs, milk, and salt. The dough is rolled out into a thin sheet and then cut into strips. These pasta strips are left to dry for several days on clean sheets, away from dust and insects, to ensure they dry completely.
