Rice & Quinoa Salad with Grilled Squid
INGREDIENTS
200g Agrotopos Rice with Quinoa
2 tbsp olive oil
2 whole cleaned squid
5 cherry tomatoes, halved
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 spring onion, finely chopped
For the marinade:
2 tbsp olive oil
2 tbsp lemon juice
½ tsp cumin
1 pinch of pepper
For the dressing:
2 tbsp lemon juice
2 tbsp olive oil
¼ tsp salt
½ tsp honey
Chopped parsley for garnish (optional)
INSTRUCTIONS
1. In a bowl, mix the quinoa, cinnamon, nutmeg, and clove.
2. In another small bowl, whisk the eggs and mix them with the soy milk and maple syrup.
3. Pour the quinoa mixture into a greased baking dish.
4. Add the diced apples and raisins.
5. Pour the liquid mixture from the second bowl over the quinoa mixture.
6. Gently mix to slightly submerge the apple pieces into the baking dish.
7. Sprinkle with almonds and bake for 1 hour in a preheated oven at 180°C.
8. Let it cool and serve with a few spoonfuls of yogurt.
